  1. In a bowl, mix together the citrus zests, salt, sugar, and dill.
  2. Lay the Hamachi fillet on a piece of plastic wrap and cover it with the citrus mixture.
  3. Wrap the fillet tightly in the plastic wrap and refrigerate for at least 2 hours, or up to 24 hours.
  4. After the Hamachi has cured, rinse off the citrus mixture under cold water and pat dry.
