Citrus Cured Hamachi
This is a refreshing and light dish, perfect as an appetizer or a light meal. The citrus cure brings out the delicate flavor of the Hamachi.
Ingredients - Serves 4
- Fresh dill - A handful, chopped
- Sugar - 2 tablespoons
- Salt - 2 tablespoons
- Orange - 1, zested and juiced
- Lime - 1, zested and juiced
- Lemon - 1, zested and juiced
- Hamachi fillet - 400 grams
Let's Get Started
- In a bowl, mix together the citrus zests, salt, sugar, and dill.
- Lay the Hamachi fillet on a piece of plastic wrap and cover it with the citrus mixture.
- Wrap the fillet tightly in the plastic wrap and refrigerate for at least 2 hours, or up to 24 hours.
- After the Hamachi has cured, rinse off the citrus mixture under cold water and pat dry.
- Slice the Hamachi thinly and serve with the citrus juices drizzled on top.
