Chutneys
This tangy and sweet mango chutney is a perfect accompaniment to Indian dishes or as a spread on sandwiches.
Ingredients - Serves 8
- Salt - 1/2 teaspoon
- Red chili flakes - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Brown sugar - 1/4 cup
- Apple cider vinegar - 1/4 cup
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Red onion - 1/2, finely chopped
- Ripe mangoes - 3, peeled and diced
Let's Get Started
- In a saucepan, combine the diced mangoes, red onion, garlic, ginger, apple cider vinegar, brown sugar, cumin, coriander, red chili flakes, and salt.
- Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the mangoes are soft and the chutney has thickened.
- Remove from heat and let the chutney cool completely.
- Transfer the chutney to a sterilized jar and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
- Serve as a condiment with Indian dishes, or as a spread on sandwiches and wraps.
