  1. In a saucepan, combine the diced mangoes, red onion, garlic, ginger, apple cider vinegar, brown sugar, cumin, coriander, red chili flakes, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the mangoes are soft and the chutney has thickened.
  3. Remove from heat and let the chutney cool completely.
  4. Transfer the chutney to a sterilized jar and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
  5. Serve as a condiment with Indian dishes, or as a spread on sandwiches and wraps.
