Chutney
This tangy and sweet mango chutney is a perfect accompaniment to Indian dishes or as a condiment for sandwiches.
Ingredients - Serves 8
- Salt - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Raisins - 1/4 cup
- Brown sugar - 1/4 cup
- Apple cider vinegar - 1/2 cup
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Red onion - 1/2, finely chopped
- Ripe mangoes - 4, peeled and diced
Let's Get Started
- In a large saucepan, combine the mangoes, red onion, ginger, garlic, apple cider vinegar, brown sugar, raisins, cumin, coriander, cayenne pepper, and salt.
- Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30 minutes, stirring occasionally.
- Remove from heat and let the chutney cool completely.
- Transfer the chutney to sterilized jars and refrigerate for at least 24 hours before serving.
- Serve as a condiment with Indian dishes or as a spread for sandwiches.
