Chipotle Tempeh Tostadas
These vegan tostadas are packed with flavor from the smoky chipotle tempeh and fresh toppings.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Red onion - 1/4, thinly sliced
- Avocado - 1, sliced
- Refried beans - 1 can
- Tostada shells - 8
- Olive oil - 2 tablespoons
- Chipotle peppers in adobo sauce - 2 peppers, plus 1 tablespoon sauce
- Tempeh - 8 ounces
Let's Get Started
- Crumble the tempeh into a bowl and mix with the chipotle peppers and adobo sauce.
- Heat the olive oil in a skillet over medium heat. Add the tempeh and cook until browned, about 5 minutes.
