Chilate Con Carne
Chilate con Carne is a traditional Mexican stew made with beef, vegetables, and spices.

- Fresh cilantro - 1/4 cup, chopped

- Beef broth - 4 cups
- Tomatoes - 2, diced
- Potatoes - 2, diced
- Carrots - 2, sliced
- Bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Beef stew meat - 1.5 pounds, cubed
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the beef stew meat and cook until browned on all sides.
- Add the chopped onion, minced garlic, and chopped bell pepper. Cook until the vegetables are softened.
- Add the sliced carrots, diced potatoes, and diced tomatoes. Stir to combine.
- Pour in the beef broth and add the cumin, paprika, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
- Stir in the chopped cilantro and cook for an additional 5 minutes.
- Serve hot with lime wedges on the side.
