Chilaquiles
Chilaquiles is a traditional Mexican dish made with tortilla chips, salsa, and toppings.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Avocado - 1, sliced
- Queso fresco - 1/2 cup, crumbled
- Cilantro - 1/4 cup, chopped
- Black beans - 1 cup, drained and rinsed
- Jalapeno - 1, seeded and diced
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Vegetable oil - 2 tablespoons
- Salsa - 2 cups
- Corn tortilla chips - 4 cups
Let's Get Started
- In a large skillet, heat the vegetable oil over medium heat.
- Add the diced onion, minced garlic, and diced jalapeno. Cook until the onion is translucent, about 5 minutes.
- Add the salsa and black beans to the skillet. Stir to combine.
- Add the tortilla chips to the skillet and toss to coat them in the salsa mixture. Cook for 2-3 minutes, until the chips are slightly softened.
- Remove the skillet from heat and sprinkle with crumbled queso fresco and chopped cilantro.
- Serve the chilaquiles with sliced avocado and lime wedges on the side.
