Chickpea Veggie Burgers
These hearty, flavorful burgers are made with chickpeas, veggies, and a blend of spices. They're perfect for a vegetarian meal or meatless Monday.
Ingredients - Serves 4
- Lettuce, tomato, and other burger toppings - As needed
- Burger buns - 4
- Olive oil - 2 tablespoons
- Egg - 1
- Breadcrumbs - 1/2 cup
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Carrot - 1, grated
- Chickpeas - 1 can (15 ounces), drained and rinsed
Let's Get Started
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add the grated carrot, minced garlic, cumin, coriander, salt, and pepper. Mix well.
- Stir in the breadcrumbs and egg until the mixture holds together. You should be able to form it into patties.
- Divide the mixture into four equal portions and shape each one into a patty.
- Heat the olive oil in a large skillet over medium heat.
- Cook the patties for about 5 minutes on each side, until they're golden brown and heated through.
- Serve the burgers on the buns with your choice of toppings.
