Black Bean Veggie Burger
A hearty and flavorful vegetarian burger made with black beans and a variety of vegetables.
Ingredients - Serves 4
- Lettuce, tomato, and other burger toppings - As desired
- Burger buns - 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Bread crumbs - 1/2 cup
- Egg - 1
- Garlic - 2 cloves, minced
- Onion - 1/2, finely chopped
- Red bell pepper - 1, finely chopped
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a medium bowl, mash the black beans with a fork until thick and pasty.
- In a food processor, finely chop bell pepper, onion, and garlic, then add them to the mashed beans.
- Stir in the egg, bread crumbs, chili powder, cumin, and salt and pepper. Mix well.
- Divide mixture into four patties.
- In a large skillet, heat the olive oil over medium heat. Add the patties and cook for about 5 minutes on each side, until browned and heated through.
- Serve the burgers on the buns with lettuce, tomato, and your favorite burger toppings.
