  1. In a large pot, heat oil over medium heat.
  2. Saute ginger, garlic, and onion until fragrant.
  3. Add chicken pieces and cook until lightly browned.
  4. Pour in water and bring to a boil.
  5. Add fish sauce and season with salt and pepper.
  6. Simmer for 20 minutes or until chicken is tender.
  7. Add green papaya slices and cook for another 5 minutes.
  8. Stir in chili leaves and cook for 2 minutes.
