Chicken Street Tacos
These flavorful chicken street tacos are made with marinated grilled chicken, fresh toppings, and a tangy salsa.
Ingredients - Serves 4
- Lime wedges - For serving
- Salsa - 1/2 cup
- Onion - 1/4 cup, diced
- Cilantro - 1/4 cup, chopped
- Corn tortillas - 8
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Lime juice - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a bowl, combine the lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper to make the marinade.
- Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for about 6-8 minutes per side, or until cooked through and nicely charred. Remove from the grill and let it rest for a few minutes.
- Slice the grilled chicken into thin strips.
- Warm the corn tortillas on the grill or in a dry skillet.
- Fill each tortilla with the sliced chicken, diced onion, chopped cilantro, and a spoonful of salsa.
- Serve the chicken street tacos with lime wedges on the side.
