- Salsa - For serving
- Sour cream - For serving
- Taco seasoning - 1 packet
- Olive oil - 2 tablespoons
- Onion - 1, diced
- Green bell pepper - 1, diced
- Cheddar cheese - 2 cups, shredded
- Flour tortillas - 8
- Chicken breast - 2, cooked and shredded
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the diced bell pepper and onion to the skillet and cook until softened.
- Add the shredded chicken and taco seasoning to the skillet and stir to combine.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
- Top with a quarter of the chicken mixture and another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook until the other side is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and chicken mixture.
- Cut the quesadillas into quarters and serve with sour cream and salsa.
