Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced bell pepper and onion to the skillet and cook until softened.
  3. Add the shredded chicken and taco seasoning to the skillet and stir to combine.
  4. Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
  5. Top with a quarter of the chicken mixture and another tortilla.
  6. Cook until the bottom tortilla is golden brown, then flip and cook until the other side is golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas and chicken mixture.
  8. Cut the quesadillas into quarters and serve with sour cream and salsa.
