Chicken Noodle Soup
A comforting and hearty soup made with tender chicken, vegetables, and noodles.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Dried thyme - 1 teaspoon
- Egg noodles - 8 oz
- Chicken broth - 8 cups
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Celery stalks - 2, sliced
- Carrots - 2, sliced
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts, carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper.
- Reduce the heat to low and simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken breasts from the pot and shred them using two forks.
- Return the shredded chicken to the pot.
- Add the egg noodles and cook for an additional 8-10 minutes, or until the noodles are tender.
- Remove the bay leaf and discard.
- Stir in the fresh parsley.
- Serve hot and enjoy!
