Chicken Freekeh
This hearty and flavorful chicken freekeh dish is made with tender chicken, nutty freekeh grains, and a blend of aromatic spices.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Chicken broth - 2 cups
- Salt and pepper - To taste
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Freekeh - 1 cup
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the chicken breasts to the pot and cook until browned on both sides.
- Remove the chicken from the pot and set aside.
- Add the freekeh, cumin, coriander, cinnamon, salt, and pepper to the pot. Stir well to coat the freekeh with the spices.
- Pour in the chicken broth and lemon juice. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the freekeh is tender and the liquid is absorbed.
- While the freekeh is cooking, shred the cooked chicken breasts into bite-sized pieces.
- Once the freekeh is cooked, add the shredded chicken back to the pot and stir to combine.
- Cook for an additional 5 minutes to heat the chicken through.
- Serve the chicken freekeh hot, garnished with fresh parsley.
