Chicken Freekeh

Ingredients - Serves 4

Let's Get Started

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Add the chicken breasts to the pot and cook until browned on both sides.
  4. Remove the chicken from the pot and set aside.
  5. Add the freekeh, cumin, coriander, cinnamon, salt, and pepper to the pot. Stir well to coat the freekeh with the spices.
  6. Pour in the chicken broth and lemon juice. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the freekeh is tender and the liquid is absorbed.
  8. While the freekeh is cooking, shred the cooked chicken breasts into bite-sized pieces.
  9. Once the freekeh is cooked, add the shredded chicken back to the pot and stir to combine.
  10. Cook for an additional 5 minutes to heat the chicken through.
  11. Serve the chicken freekeh hot, garnished with fresh parsley.
