Chicken Fajita Sandwich

Let's Get Started

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breasts with fajita seasoning, salt, and pepper.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes.
  4. While the chicken is resting, heat olive oil in a skillet over medium heat.
  5. Add the sliced bell peppers and onion to the skillet and sauté until tender, about 5-7 minutes.
  6. Slice the grilled chicken into thin strips.
  7. Slice the ciabatta rolls in half and lightly toast them.
  8. Spread sour cream on the bottom half of each roll, then top with the sautéed peppers and onions.
  9. Place the sliced chicken on top of the peppers and onions, then add 2 slices of cheese on each sandwich.
  10. Place the sandwiches under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
  11. Remove from the broiler and top with salsa and guacamole.
  12. Cover with the top half of the ciabatta roll and serve hot.
