Chicken Fajita Sandwich
This delicious chicken fajita sandwich is packed with flavorful grilled chicken, sautéed peppers and onions, and topped with melted cheese.
Ingredients - Serves 2
- Guacamole - 2 tablespoons
- Salsa - 2 tablespoons
- Sour cream - 2 tablespoons
- Cheese - 4 slices (cheddar or pepper jack)
- Ciabatta rolls - 2
- Salt and pepper - To taste
- Fajita seasoning - 2 tablespoons
- Olive oil - 2 tablespoons
- Onion - 1 large, sliced
- Bell peppers - 1 red, 1 green, sliced
- Chicken breast - 2 boneless, skinless
Let's Get Started
- Preheat the grill or grill pan over medium-high heat.
- Season the chicken breasts with fajita seasoning, salt, and pepper.
- Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes.
- While the chicken is resting, heat olive oil in a skillet over medium heat.
- Add the sliced bell peppers and onion to the skillet and sauté until tender, about 5-7 minutes.
- Slice the grilled chicken into thin strips.
- Slice the ciabatta rolls in half and lightly toast them.
- Spread sour cream on the bottom half of each roll, then top with the sautéed peppers and onions.
- Place the sliced chicken on top of the peppers and onions, then add 2 slices of cheese on each sandwich.
- Place the sandwiches under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
- Remove from the broiler and top with salsa and guacamole.
- Cover with the top half of the ciabatta roll and serve hot.
