Beantown Burrito
A hearty and delicious burrito filled with beans, rice, and cheese, perfect for a quick lunch or dinner.
Ingredients - Serves 4
- Chopped tomatoes - 1 cup
- Chopped lettuce - 1 cup
- Guacamole - 1/2 cup
- Sour cream - 1/2 cup
- Salsa - 1 cup
- Large flour tortillas - 4
- Shredded cheese - 1 cup
- Cooked rice - 2 cups
- Refried beans - 1 can
Let's Get Started
- Heat the refried beans in a saucepan over medium heat until warm.
- Warm the tortillas in a dry skillet over medium heat until they are soft and pliable.
- Spread a quarter of the beans down the center of each tortilla.
- Top the beans with a quarter of the rice, cheese, salsa, sour cream, guacamole, lettuce, and tomatoes.
- Fold in the sides of the tortilla and roll it up tightly, tucking in the ends as you go.
- Repeat with the remaining tortillas and fillings.
- Serve the burritos warm, with extra salsa and sour cream on the side.
