Let's Get Started

  1. Preheat the oven to 375°F.
  2. Roll out one of the pie crusts and place it in a 9-inch pie dish.
  3. In a large bowl, mix together the cherries, sugar, cornstarch, and lemon juice.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherry mixture with small pieces of butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Arrange the strips in a lattice pattern over the cherry mixture.
  8. Brush the top of the pie crust with the beaten egg and sprinkle with coarse sugar.
  9. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Let the pie cool for at least 30 minutes before serving.
