Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Roll out one pie crust and fit it into a 9-inch pie plate.
  3. In a large bowl, combine the apples, cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
  4. Pour the fruit mixture into the pie crust.
  5. Roll out the second pie crust and place it on top of the fruit. Crimp the edges to seal.
  6. Brush the top crust with the beaten egg and sprinkle with coarse sugar.
  7. Cut a few slits in the top crust to allow steam to escape.
  8. Bake for 45-50 minutes, or until the crust is golden and the filling is bubbling.
  9. Let the pie cool for at least 2 hours before serving.
