Apple Galette with Cheddar Crust
A rustic, free-form tart filled with sweet apples and a savory cheddar crust.
Ingredients - Serves 8
- Turbinado sugar - 1 tablespoon
- Egg - 1, beaten
- Ground cinnamon - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Granulated sugar - 1/2 cup
- Apples - 4, peeled and thinly sliced
- Ice water - 1/4 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Cheddar cheese - 1 cup, shredded
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, combine the flour and cheddar cheese. Add the butter and use your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, stirring until the dough comes together. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 375°F.
- In a large bowl, combine the apples, granulated sugar, lemon juice, and cinnamon.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
- Arrange the apple mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary.
- Brush the dough with the beaten egg and sprinkle with the turbinado sugar.
- Bake for 45-50 minutes, or until the crust is golden and the apples are tender. Let cool before slicing and serving.
