Let's Get Started

  1. In a large pot, combine the milk, water, scallions, and cilantro. Bring to a simmer over medium heat.
  2. Crack the eggs into the pot, one at a time, making sure not to break the yolks. Cover the pot and let the eggs poach in the milk mixture for about 4 minutes, or until the whites are set but the yolks are still runny.
  3. Season the soup with salt and pepper to taste.
