Changua
Changua is a traditional Colombian breakfast soup made with milk, eggs, scallions and cilantro. It's a comforting and nutritious start to the day.
Ingredients - Serves 4
- Bread - 4 slices, toasted
- Salt and pepper - To taste
- Eggs - 4
- Cilantro - 1/4 cup, chopped
- Scallions - 4, chopped
- Water - 2 cups
- Milk - 4 cups
Let's Get Started
- In a large pot, combine the milk, water, scallions, and cilantro. Bring to a simmer over medium heat.
- Crack the eggs into the pot, one at a time, making sure not to break the yolks. Cover the pot and let the eggs poach in the milk mixture for about 4 minutes, or until the whites are set but the yolks are still runny.
- Season the soup with salt and pepper to taste.
- To serve, place a slice of toasted bread in each bowl. Ladle the soup over the bread, making sure each serving gets an egg. Enjoy your Changua hot.
