Cha Mi
Cha Mi is a delicious Vietnamese noodle dish made with egg noodles, pork, shrimp, and vegetables.
Ingredients - Serves 4
- Roasted peanuts - 1/4 cup, crushed
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Sugar - 1 teaspoon
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Green onions - 4, chopped
- Bean sprouts - 1 cup
- Carrots - 2, julienned
- Shrimp - 8 ounces, peeled and deveined
- Pork loin - 8 ounces, thinly sliced
- Egg noodles - 8 ounces
Let's Get Started
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet, heat some oil over medium heat. Add the pork loin and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the shrimp and cook until pink and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant. Add the carrots and cook for 2-3 minutes until slightly softened.
- Add the bean sprouts and green onions to the skillet and cook for another 2 minutes.
- In a small bowl, whisk together the soy sauce, fish sauce, sugar, and lime juice. Pour the sauce over the vegetables in the skillet and stir to combine.
- Add the cooked pork loin, shrimp, and egg noodles to the skillet. Toss everything together until well coated in the sauce.
- Remove from heat and garnish with chopped cilantro and crushed roasted peanuts.
- Serve hot and enjoy!
