- Cilantro - 1/2 cup, chopped
- Red bell pepper - 1, finely chopped
- Red onion - 1, finely chopped
- Lime juice - 1 cup
- White fish - 1 pound, cut into small pieces

- Place the fish in a glass bowl and cover with the lime juice. Let it marinate in the refrigerator for at least 2 hours, or until the fish is white and opaque.
- Drain the fish, reserving some of the lime juice.
- Add the onion, bell pepper, and cilantro to the bowl with the fish. Season with salt and pepper.
- Stir everything together, adding some of the reserved lime juice if needed.
- Serve the ceviche chilled, with tortilla chips or crackers on the side.
