Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2, thinly sliced
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Cochayuyo (dried bull kelp) - 1 cup, soaked and cut into strips

- Soak the Cochayuyo in water overnight. Once it's rehydrated, rinse it well and cut into thin strips.
- In a large bowl, combine the Cochayuyo, diced peppers, sliced onion, and chopped cilantro.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make a dressing.
- Pour the dressing over the salad and toss well to combine.
- Let the salad sit for a few minutes to allow the flavors to meld together before serving.
