Cavolo Nero Salad
A healthy and delicious salad made with cavolo nero, also known as Tuscan kale, tossed with a tangy lemon vinaigrette.
Ingredients - Serves 4
- Almonds - 1/4 cup, toasted and chopped
- Parmesan cheese - 1/4 cup, grated
- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Cavolo nero - 1 bunch, stems removed and leaves thinly sliced
Let's Get Started
- In a large bowl, combine the cavolo nero, lemon juice, olive oil, garlic, salt, and pepper.
- Toss well to combine and let sit for 10 minutes to allow the cavolo nero to soften.
- Add the grated Parmesan and toasted almonds and toss again.
