Broccoli and Almond Soup
A creamy, healthy and delicious soup made with fresh broccoli and almonds.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Almonds - 1/2 cup, blanched
- Broccoli - 1 large head, chopped
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the broccoli and almonds to the pot and cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes, or until the broccoli is tender.
- Use a blender to puree the soup until smooth. Return the soup to the pot.
- Season with salt and pepper to taste. Serve hot.
