Broccoli and Almond Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the broccoli and almonds to the pot and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes, or until the broccoli is tender.
  5. Use a blender to puree the soup until smooth. Return the soup to the pot.
  6. Season with salt and pepper to taste. Serve hot.
