Quinoa Pilaf with Almonds

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a saucepan, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
  3. While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
  4. Add the almonds to the skillet and cook until they are lightly toasted.
  5. Fluff the cooked quinoa with a fork and add it to the skillet. Stir in the parsley and season with salt and pepper.
  6. Serve the quinoa pilaf warm.
