Castagnaccio is a traditional Italian dessert made from chestnut flour, water, olive oil, pine nuts, and raisins. It's a dense, rich cake that's naturally gluten-free.
Ingredients - Serves 8
- Salt - A pinch
- Rosemary sprigs - 2
- Raisins - 1/4 cup
- Pine nuts - 1/4 cup
- Olive oil - 1/4 cup
- Water - 2 cups
- Chestnut flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F (190°C) and lightly oil a 9-inch round cake pan.
- In a large bowl, mix the chestnut flour and salt. Gradually add the water, whisking to prevent lumps.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Drizzle the top with the olive oil and sprinkle with the pine nuts and raisins.
- Press the rosemary sprigs into the top of the batter.
- Bake for 30 minutes, or until the top is firm and the edges are pulling away from the sides of the pan.
- Let cool before slicing and serving.
