Carrot Halwa
Carrot Halwa is a delicious Indian dessert made with grated carrots, milk, sugar, and flavored with cardamom and nuts.
Ingredients - Serves 6
- Almonds - 1/4 cup, sliced
- Raisins - 1/4 cup
- Cashews - 1/4 cup, chopped
- Cardamom powder - 1 teaspoon
- Ghee (clarified butter) - 4 tablespoons
- Sugar - 1 cup
- Milk - 4 cups
- Carrots - 1 lb, grated
Let's Get Started
- Heat ghee in a pan and add the grated carrots. Cook on medium heat for 10 minutes, stirring occasionally.
- Add milk to the pan and cook on low heat until the carrots are soft and the milk is absorbed, about 30 minutes.
- Add sugar and cardamom powder to the pan. Mix well and cook for another 5 minutes.
- In a separate small pan, heat a tablespoon of ghee and fry the cashews, raisins, and almonds until golden.
- Add the fried nuts to the carrot mixture and mix well.
- Serve hot or chilled. Garnish with additional nuts if desired.
