Caramelized Onion & Tempeh Tart
A savory tart filled with caramelized onions, tempeh, and a creamy tofu filling. Perfect for a light dinner or brunch.
Ingredients - Serves 6
- Pie crust - 1, unbaked
- Salt and pepper - To taste
- Lemon juice - 1 tablespoon
- Nutritional yeast - 1/4 cup
- Tofu - 14 ounces, silken
- Garlic - 2 cloves, minced
- Tempeh - 8 ounces, crumbled
- Onions - 2 large, thinly sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F.
- Heat the olive oil in a large skillet over medium heat. Add the onions and cook until caramelized, about 20 minutes.
- Add the crumbled tempeh and garlic to the skillet and cook for another 5 minutes.
- In a blender, combine the tofu, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
- Spread the onion and tempeh mixture in the bottom of the pie crust. Pour the tofu mixture over top.
- Bake for 40 minutes, or until the tart is set and the crust is golden. Let cool for a few minutes before slicing and serving.
