Capirotada
Capirotada is a traditional Mexican bread pudding served during Lent. It's made with bread, cheese, raisins, and a syrup made from piloncillo (Mexican brown sugar).
Ingredients - Serves 8
- Peanuts - 1/2 cup, chopped
- Raisins - 1 cup
- Longhorn or colby cheese - 2 cups, shredded
- Cloves - 5
- Cinnamon sticks - 2
- Water - 4 cups
- Piloncillo - 2 cones
- Butter - 1/2 cup, melted
- Bolillo rolls or french bread - 6, cut into 1-inch slices
Let's Get Started
- Preheat the oven to 350°F and grease a baking dish.
- Brush the bread slices with melted butter and arrange them in the baking dish.
- In a saucepan, combine the piloncillo, water, cinnamon sticks, and cloves. Bring to a boil, then reduce the heat and simmer until the piloncillo is dissolved.
- Pour the syrup over the bread slices, making sure all the bread is soaked.
- Sprinkle the cheese, raisins, and peanuts over the bread.
- Bake for 20-30 minutes, or until the cheese is melted and the bread is golden brown.
