Certosino
Certosino is a traditional Italian Christmas cake from Bologna. It's packed with nuts, dried fruit, and spices, and covered in a glossy chocolate glaze.
Ingredients - Serves 8
- Chocolate glaze - For topping
- Dark rum - 1/4 cup
- Eggs - 2
- Butter - 1/2 cup, melted
- Dark chocolate - 1/2 cup, chopped
- Candied orange peel - 1/2 cup, chopped
- Raisins - 1 cup
- Pine nuts - 1/2 cup
- Almonds - 1 cup, chopped
- Nutmeg - 1/4 teaspoon
- Cloves - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Baking soda - 1 teaspoon
- Cocoa powder - 1/2 cup
- Honey - 1/2 cup
- Sugar - 1 cup
- Flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease a round cake pan.
- In a large bowl, combine the flour, sugar, honey, cocoa powder, baking soda, cinnamon, cloves, and nutmeg.
- Stir in the almonds, pine nuts, raisins, candied orange peel, and dark chocolate.
- In a separate bowl, whisk together the melted butter, eggs, and rum.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
- Once the cake is cool, cover it with the chocolate glaze.
