Cap I Pota
Cap i Pota is a traditional Catalan stew made with beef head and leg. It's a hearty and comforting dish, perfect for cold winter days.
Ingredients - Serves 6
- Parsley - A handful, chopped
- Salt and pepper - To taste
- Bay leaves - 2
- White wine - 1 cup
- Tomatoes - 2, chopped
- Potatoes - 4, chopped
- Carrots - 2, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Beef head and leg - 1.5 kg
Let's Get Started
- Clean the beef head and leg and cut into pieces.
- In a large pot, sauté the onions and garlic until golden.
- Add the beef to the pot and brown on all sides.
- Add the carrots, potatoes, tomatoes, wine, bay leaves, salt, and pepper. Cover with water.
- Bring to a boil, then reduce the heat and simmer for about 3 hours, or until the meat is tender.
- Adjust the seasoning if necessary and add the chopped parsley before serving.
