Cantonese Roast Goose

Ingredients - Serves 6
- Salt - 1 tablespoon
- Vinegar - 1/4 cup
- Honey - 1/4 cup
- Ginger - 1 piece (about 2 inches), minced
- Garlic - 5 cloves, minced
- Chinese five-spice powder - 1 tablespoon
- Dark soy sauce - 1/4 cup
- Light soy sauce - 1/2 cup
- Whole goose - 1 (about 4 kg)
Let's Get Started
- Clean the goose and pat it dry with paper towels.
- In a bowl, combine the light soy sauce, dark soy sauce, five-spice powder, minced garlic, minced ginger, honey, vinegar, and salt.
- Rub the marinade all over the goose, inside and out. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat your oven to 350°F (175°C).
- Place the goose on a rack in a roasting pan, breast side up. Roast in the preheated oven for about 2 hours, or until the skin is crispy and the meat is cooked through.
- Let the goose rest for about 10 minutes before carving. Serve with your favorite side dishes.
