  1. Remove the stems and seeds from the guajillo chilies and soak them in hot water for 15 minutes.
  2. In a blender, combine the soaked chilies, chipotle peppers, garlic, and salt. Blend until smooth.
  3. Heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
  4. Add the shrimp to the skillet and cook until pink, about 2 minutes per side.
  5. Pour the chili sauce over the shrimp and stir to coat. Cook for another 2-3 minutes, until the shrimp are cooked through.
  6. Serve the shrimp with the chopped tomatoes and lime wedges.
