Camarones a La Diabla
Camarones a la Diabla, also known as 'Devil Shrimp', is a spicy Mexican shrimp dish made with a fiery red chili sauce.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Tomatoes - 2, chopped
- White onion - 1/2, chopped
- Vegetable oil - 2 tablespoons
- Salt - 1 teaspoon
- Garlic - 2 cloves
- Chipotle peppers in adobo sauce - 2
- Guajillo chilies - 4, dried
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Remove the stems and seeds from the guajillo chilies and soak them in hot water for 15 minutes.
- In a blender, combine the soaked chilies, chipotle peppers, garlic, and salt. Blend until smooth.
- Heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
- Add the shrimp to the skillet and cook until pink, about 2 minutes per side.
- Pour the chili sauce over the shrimp and stir to coat. Cook for another 2-3 minutes, until the shrimp are cooked through.
- Serve the shrimp with the chopped tomatoes and lime wedges.
