Ensalada de Nopal
A traditional Mexican salad made with fresh cactus pads, tomatoes, onions, and cilantro.
Ingredients - Serves 4
- Pepper - To taste
- Salt - To taste
- Olive oil - 2 tablespoons
- Lime - Juice of 1 lime
- Cilantro - 1/2 cup, chopped
- Onion - 1 medium, finely chopped
- Tomatoes - 2 large, diced
- Nopal - 4 pads, cleaned and diced
Let's Get Started
- Boil the diced nopal in a pot of water until it changes color and becomes tender, about 10 minutes. Drain and set aside to cool.
- In a large bowl, combine the cooled nopal, diced tomatoes, chopped onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make a dressing.
- Pour the dressing over the salad and toss to combine.
- Serve the salad chilled or at room temperature.
