Cacio e Pepe is a classic Italian pasta dish made with a simple yet flavorful sauce of cheese and black pepper.
Ingredients - Serves 2
- Salt - To taste
- Black pepper - 1 teaspoon, freshly ground
- Pecorino romano cheese - 1 cup, grated
- Spaghetti - 200 grams
Let's Get Started
- Bring a large pot of salted water to a boil.
- Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the freshly ground black pepper and toast for a minute until fragrant.
- Add the cooked spaghetti to the skillet and toss to coat with the pepper-infused oil.
- Remove the skillet from heat and gradually add the grated Pecorino Romano cheese, tossing continuously to create a creamy sauce. If needed, add some of the reserved pasta water to achieve desired consistency.
- Season with salt to taste and serve immediately.
- Garnish with additional grated Pecorino Romano cheese and freshly ground black pepper, if desired.
