Ingredients - Serves 4

Let's Get Started

  1. Bring a large pot of salted water to a boil. Add the linguine and cook until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the black pepper and cook for 1 minute.
  3. Reserve 2 cups of the pasta water, then drain the pasta.
  4. Add 1 cup of the reserved pasta water to the skillet. Bring to a simmer.
  5. Add the cooked pasta and the Pecorino Romano cheese to the skillet. Toss until the cheese is melted and the pasta is coated in the sauce.
  6. If the sauce is too thick, add more pasta water, a little at a time, until the desired consistency is reached.
  7. Remove from heat and stir in the Parmesan cheese. Season with salt to taste.
  8. Serve the pasta hot, with extra cheese and black pepper on the side.
