Linguine Cacio E Pepe

Ingredients - Serves 4
- Salt - To taste
- Parmesan cheese - 1/2 cup, finely grated
- Pecorino romano cheese - 1 1/2 cups, finely grated
- Black pepper - 1 teaspoon, freshly ground
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Bring a large pot of salted water to a boil. Add the linguine and cook until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the black pepper and cook for 1 minute.
- Reserve 2 cups of the pasta water, then drain the pasta.
- Add 1 cup of the reserved pasta water to the skillet. Bring to a simmer.
- Add the cooked pasta and the Pecorino Romano cheese to the skillet. Toss until the cheese is melted and the pasta is coated in the sauce.
- If the sauce is too thick, add more pasta water, a little at a time, until the desired consistency is reached.
- Remove from heat and stir in the Parmesan cheese. Season with salt to taste.
- Serve the pasta hot, with extra cheese and black pepper on the side.
