Amatriciana is a traditional Italian pasta dish from Amatrice, Italy. It's made with guanciale (pork cheek), pecorino cheese, and tomato.

Ingredients - Serves 4

Let's Get Started

  1. Cut the guanciale into small strips and fry in a pan with the olive oil until crispy.
  2. Add the peeled and chopped tomatoes and chili flakes to the pan and cook for about 15 minutes.
  3. In the meantime, cook the spaghetti in a large pot of boiling salted water until al dente.
  4. Drain the spaghetti, reserving some of the pasta water.
  5. Add the spaghetti to the pan with the sauce, adding a little pasta water if needed.
  6. Stir well to combine, then remove from the heat and add the grated pecorino cheese.
  7. Stir again until the cheese is melted and the pasta is well coated in the sauce.
  8. Season with salt and pepper to taste, then serve immediately.
