Amatriciana
Amatriciana is a traditional Italian pasta dish from Amatrice, Italy. It's made with guanciale (pork cheek), pecorino cheese, and tomato.
Ingredients - Serves 4
- Spaghetti - 400 grams
- Black pepper - to taste
- Salt - to taste
- Extra virgin olive oil - 2 tablespoons
- Red chili flakes - 1 teaspoon
- Tomatoes - 400 grams, peeled and chopped
- Pecorino cheese - 100 grams, grated
- Guanciale - 200 grams
Let's Get Started
- Cut the guanciale into small strips and fry in a pan with the olive oil until crispy.
- Add the peeled and chopped tomatoes and chili flakes to the pan and cook for about 15 minutes.
- In the meantime, cook the spaghetti in a large pot of boiling salted water until al dente.
- Drain the spaghetti, reserving some of the pasta water.
- Add the spaghetti to the pan with the sauce, adding a little pasta water if needed.
- Stir well to combine, then remove from the heat and add the grated pecorino cheese.
- Stir again until the cheese is melted and the pasta is well coated in the sauce.
- Season with salt and pepper to taste, then serve immediately.
