Cacio e Pepe is a simple, yet delicious Italian pasta dish that requires only a few key ingredients. It's a perfect blend of Pecorino Romano cheese and freshly ground black pepper served over pasta.
Ingredients - Serves 4
- Unsalted butter - 2 tablespoons
- Salt - To taste
- Freshly ground black pepper - 2 teaspoons
- Pecorino romano cheese - 1 1/2 cups, finely grated
- Spaghetti - 400 grams
Let's Get Started
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
- While the pasta is cooking, grate the Pecorino Romano cheese and set it aside.
- Reserve 2 cups of the pasta water, then drain the pasta.
- In the same pot, melt the butter over medium heat. Add the black pepper and cook for 1 minute.
- Add 1 1/2 cups of the reserved pasta water to the pot and bring to a simmer.
- Return the pasta to the pot and sprinkle half of the cheese over it. Toss the pasta until the cheese has melted and the sauce is creamy, adding more pasta water if needed.
- Serve the pasta with the remaining cheese sprinkled on top.
