Cabbage Borscht

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the cabbage, beets, and carrots and cook until the vegetables are soft, about 10 minutes.
  4. Stir in the tomato paste and cook for another 2 minutes.
  5. Add the vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. Stir in the dill and cook for another 5 minutes.
  7. Serve the soup hot, with a dollop of sour cream on top.
