Cabbage and Kielbasa Soup
This hearty cabbage and kielbasa soup is packed with flavors and perfect for a comforting meal.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Dried thyme - 1 teaspoon
- Chicken broth - 6 cups
- Potatoes - 2 medium, diced
- Carrots - 2 medium, sliced
- Cabbage - 1 small head, shredded
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Kielbasa sausage - 1 pound, sliced
Let's Get Started
- In a large pot, cook the sliced kielbasa sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant.
- Add the shredded cabbage, sliced carrots, and diced potatoes to the pot. Stir well to combine.
- Pour in the chicken broth and add the dried thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the vegetables are tender.
- Add the cooked kielbasa sausage back to the pot and simmer for an additional 5 minutes to heat through.
- Remove the bay leaf from the soup and discard.
- Serve the cabbage and kielbasa soup hot, garnished with fresh parsley.
