Cabbage and Kielbasa Soup

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, cook the sliced kielbasa sausage over medium heat until browned. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant.
  3. Add the shredded cabbage, sliced carrots, and diced potatoes to the pot. Stir well to combine.
  4. Pour in the chicken broth and add the dried thyme, bay leaf, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the vegetables are tender.
  6. Add the cooked kielbasa sausage back to the pot and simmer for an additional 5 minutes to heat through.
  7. Remove the bay leaf from the soup and discard.
  8. Serve the cabbage and kielbasa soup hot, garnished with fresh parsley.
