Bun Tofu Xa Ot
Bun Tofu Xa Ot is a Vietnamese dish made with marinated tofu, lemongrass, and chili peppers, served over vermicelli noodles.
Ingredients - Serves 2
- Roasted peanuts - 1/4 cup, crushed
- Mint leaves - 1/4 cup
- Carrots - 1, julienned
- Cucumber - 1, thinly sliced
- Lettuce - 2 cups, shredded
- Vermicelli noodles - 8 ounces
- Lime juice - 2 tablespoons
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili peppers - 2, thinly sliced
- Lemongrass - 2 stalks, minced
- Firm tofu - 8 ounces
Let's Get Started
- Press the tofu to remove excess water, then cut it into cubes.
- In a bowl, combine the minced lemongrass, sliced chili peppers, minced garlic, fish sauce, sugar, and lime juice. Mix well.
- Add the tofu cubes to the marinade and let them marinate for at least 15 minutes.
- Cook the vermicelli noodles according to the package instructions. Drain and set aside.
- Heat a pan over medium heat and add the marinated tofu. Cook for about 5 minutes, or until the tofu is golden brown and crispy.
- In serving bowls, assemble the dish by placing a bed of vermicelli noodles, shredded lettuce, sliced cucumber, julienned carrots, and mint leaves.
- Top with the cooked tofu cubes and garnish with crushed roasted peanuts.
- Serve the Bun Tofu Xa Ot with a side of fish sauce for dipping, if desired.
