Let's Get Started

  1. In a large bowl, mix together the buckwheat flour, egg, and salt. Gradually add in the water, stirring to combine.
  2. Heat a little butter in a non-stick frying pan over medium heat.
  3. Pour a ladleful of the batter into the pan, swirling it around to cover the surface.
  4. Cook for 1-2 minutes, or until the edges start to curl up.
  5. Flip the galette and cook for another 1-2 minutes.
  6. Place a slice of ham, a sprinkle of cheese, and an egg in the center of the galette. Fold the edges in to create a square shape, leaving the egg exposed.
  7. Cover the pan and cook for a few more minutes, until the egg is cooked to your liking.
  8. Repeat with the remaining batter and fillings.
