Ingredients - Serves 4
- Egg - 4 (for filling)
- Ham - 4 slices
- Cheese - 1/2 cup, grated
- Butter - For cooking
- Water - 2 cups
- Salt - 1/2 teaspoon

- Buckwheat flour - 1 cup
Let's Get Started
- In a large bowl, mix together the buckwheat flour, egg, and salt. Gradually add in the water, stirring to combine.
- Heat a little butter in a non-stick frying pan over medium heat.
- Pour a ladleful of the batter into the pan, swirling it around to cover the surface.
- Cook for 1-2 minutes, or until the edges start to curl up.
- Flip the galette and cook for another 1-2 minutes.
- Place a slice of ham, a sprinkle of cheese, and an egg in the center of the galette. Fold the edges in to create a square shape, leaving the egg exposed.
- Cover the pan and cook for a few more minutes, until the egg is cooked to your liking.
- Repeat with the remaining batter and fillings.
