Broccoli and Chicken Alfredo
This creamy and delicious broccoli and chicken alfredo is a perfect comfort food dish.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Parmesan cheese - 1 cup, grated
- Heavy cream - 1 cup
- Garlic - 3 cloves, minced
- Butter - 4 tablespoons
- Pasta - 8 ounces, your choice
- Broccoli florets - 2 cups
- Chicken breast - 2, boneless and skinless, cut into bite-sized pieces
Let's Get Started
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and cook for 1 minute, until fragrant.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli florets and cook for 3-4 minutes, until slightly tender.
- Reduce the heat to low and pour in the heavy cream. Stir well to combine.
- Add the grated Parmesan cheese and stir until melted and smooth.
- Season with salt and pepper to taste.
- Add the cooked pasta and cooked chicken back to the skillet. Stir well to coat everything in the sauce.
- Cook for an additional 2-3 minutes, until heated through.
- Serve hot, garnished with fresh parsley.
