Braised Beef with Potatoes Brazilian Style

Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Bay leaves - 2
- Bell pepper - 1, sliced
- Potatoes - 4 large, peeled and cut into chunks
- Red wine - 1 cup
- Beef broth - 2 cups
- Tomato paste - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Beef chuck roast - 2 pounds, cut into chunks
Let's Get Started
- In a large pot or Dutch oven, heat some oil over medium-high heat.
- Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
- Add the tomato paste and cook for another minute.
- Pour in the beef broth and red wine. Stir well to combine.
- Return the beef to the pot and add the potatoes, bell pepper, bay leaves, paprika, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2 hours, or until the beef is tender and the potatoes are cooked through.
- Remove the bay leaves and discard them.
- Garnish with fresh parsley before serving.
- Serve the braised beef with potatoes hot, accompanied by rice or crusty bread.
