  1. In a large pot, bring water to a boil. Add the pork shoulder and cook until tender, about 1 hour. Drain and let cool.
  2. Once cooled, grind the cooked pork using a meat grinder or food processor.
  3. In a large skillet, heat the cooking oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are soft and translucent, about 5 minutes.
  4. Add the ground pork, cooked rice, Cajun seasoning, salt, black pepper, and cayenne pepper to the skillet. Stir well to combine all the ingredients.
  5. Cook the mixture over medium heat for about 10 minutes, stirring occasionally, until heated through.
  6. Remove the skillet from heat and stir in the chopped parsley and green onions.
  7. Using a sausage stuffer or your hands, stuff the mixture into sausage casings, forming links of desired size.
  8. If desired, grill or pan-fry the boudin sausages until browned and cooked through.
  9. Serve hot and enjoy!
