Boudin Sausage
Boudin sausage is a traditional Cajun dish made with pork, rice, and spices. It is typically served as a main course or as a side dish.
Ingredients - Serves 6
- Cooking oil - 2 tablespoons
- Green onions - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Cayenne pepper - 1/4 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cajun seasoning - 2 tablespoons
- Garlic - 3 cloves, minced
- Celery - 2 stalks, finely chopped
- Green bell pepper - 1, finely chopped
- Onion - 1 medium, finely chopped
- Cooked rice - 2 cups
- Pork shoulder - 2 pounds, cubed
Let's Get Started
- In a large pot, bring water to a boil. Add the pork shoulder and cook until tender, about 1 hour. Drain and let cool.
- Once cooled, grind the cooked pork using a meat grinder or food processor.
- In a large skillet, heat the cooking oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are soft and translucent, about 5 minutes.
- Add the ground pork, cooked rice, Cajun seasoning, salt, black pepper, and cayenne pepper to the skillet. Stir well to combine all the ingredients.
- Cook the mixture over medium heat for about 10 minutes, stirring occasionally, until heated through.
- Remove the skillet from heat and stir in the chopped parsley and green onions.
- Using a sausage stuffer or your hands, stuff the mixture into sausage casings, forming links of desired size.
- If desired, grill or pan-fry the boudin sausages until browned and cooked through.
- Serve hot and enjoy!
