  1. Remove the casing from the boudin sausage and place it in a mixing bowl.
  2. Add the cooked rice, beaten egg, creole seasoning, hot sauce, salt, and pepper to the bowl.
  3. Mix everything together until well combined.
  4. Shape the mixture into small balls, about 1-2 inches in diameter.
  5. Roll each ball in bread crumbs, making sure they are evenly coated.
  6. Heat vegetable oil in a deep fryer or large pot to 350°F.
  7. Carefully drop the boudin balls into the hot oil and fry until golden brown, about 4-5 minutes.
  8. Remove the balls from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Serve hot as an appetizer with your favorite dipping sauce.
