Bok Choy and Tofu Stir Fry
This delicious stir fry combines bok choy and tofu with a flavorful sauce.
Ingredients - Serves 2
- Cooking oil - 2 tablespoons
- Salt and pepper - To taste
- Red pepper flakes - 1/2 teaspoon
- Vegetable broth - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Firm tofu - 8 ounces, cubed
- Bok choy - 2 heads, chopped
Let's Get Started
- In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, vegetable broth, and red pepper flakes. Set aside.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
- Add the cubed tofu to the skillet and cook for 5 minutes, until lightly browned.
- Add the chopped bok choy to the skillet and cook for 3-4 minutes, until wilted.
- Pour the sauce mixture over the tofu and bok choy in the skillet. Stir well to coat everything evenly.
- Cook for an additional 2 minutes, until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the bok choy and tofu stir fry hot over steamed rice or noodles.
