Bok Choy and Miso Soup
This flavorful and nutritious soup combines bok choy, miso paste, and other ingredients for a delicious and comforting dish.
Ingredients - Serves 4
- Red pepper flakes - 1/2 teaspoon (optional)
- Tofu - 1/2 cup, cubed
- Green onions - 2, thinly sliced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Miso paste - 3 tablespoons
- Vegetable broth - 4 cups
- Bok choy - 4 heads, chopped
Let's Get Started
- In a large pot, bring the vegetable broth to a boil.
- Add the bok choy, ginger, garlic, soy sauce, and sesame oil to the pot. Simmer for 10 minutes, or until the bok choy is tender.
- In a small bowl, whisk together the miso paste with a ladleful of the hot broth until smooth. Add the miso mixture to the pot and stir well.
- Add the tofu and green onions to the pot and simmer for an additional 5 minutes.
- If desired, sprinkle with red pepper flakes for some heat.
