Bok Choy and Miso Soup

Let's Get Started

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the bok choy, ginger, garlic, soy sauce, and sesame oil to the pot. Simmer for 10 minutes, or until the bok choy is tender.
  3. In a small bowl, whisk together the miso paste with a ladleful of the hot broth until smooth. Add the miso mixture to the pot and stir well.
  4. Add the tofu and green onions to the pot and simmer for an additional 5 minutes.
  5. If desired, sprinkle with red pepper flakes for some heat.
