Boiled Dinner

Ingredients - Serves 6
- Onions - 2, peeled and cut into chunks
- Potatoes - 6 medium, peeled and cut into chunks
- Carrots - 6, peeled and cut into chunks
- Cabbage - 1 medium, cut into wedges
- Peppercorns - 1 tablespoon
- Bay leaves - 2
- Water - Enough to cover the brisket
- Corned beef brisket - 3 pounds
Let's Get Started
- Place the corned beef in a large pot and cover with water. Add the bay leaves and peppercorns.
- Bring to a boil, then reduce the heat and simmer for 2 hours.
- Add the cabbage, carrots, potatoes, and onions to the pot. Continue to simmer for another hour, or until the vegetables are tender.
- Remove the corned beef from the pot and let it rest for a few minutes before slicing.
- Serve the sliced corned beef with the vegetables, ladling some of the cooking liquid over the top if desired.
