Cazuela de Vacuno

Ingredients - Serves 6
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Beef broth - 6 cups
- Rice - 1 cup
- Pumpkin - 1/2, cut into chunks
- Potatoes - 4, cut into chunks
- Carrots - 2, sliced
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Beef - 1 kg, cut into chunks
Let's Get Started
- In a large pot, heat some oil and brown the beef chunks on all sides. Remove and set aside.
- In the same pot, add the onions and garlic and cook until softened.
- Return the beef to the pot, add the carrots, potatoes, pumpkin, rice, beef broth, oregano, salt, and pepper.
- Bring to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
- Adjust the seasoning if necessary and serve hot.
